What to bring to an HPP technical review

A preparation guide for product-specific high-pressure processing discussions.

Institute of Food Safety, Health & Hygiene · Published and editorially reviewed October 7, 2026 · Technical

Prepare a single overview connecting the product and proposed HPP treatment with the way the food will be packaged, stored, and distributed.

Describe the product family

List the products and variations you would like the review to cover. Identify existing technical information and any proposed grouping of products.

Document the process

Gather pressure, time, and temperature information, equipment details, packaging specifications, and the complete process sequence. Include the intended storage conditions.

Show the evidence and the question

Bring existing validation reports and relevant operating records. State whether the project concerns a new application, a change, a study review, or a deviation.

Keep the conclusion specific

HPP efficacy is influenced by processing conditions, the food, and the microorganisms of concern. Technical conclusions should remain tied to the scope supported by the evidence.

This material is a preparation aid. Product-specific controls, limits, and conclusions require review of the actual application.
