Food safety questions belong in the product-development conversation while the formulation, process, and package are still being defined.
Describe the intended product
Gather the concept, ingredients, process flow, packaging, intended use, distribution, and desired shelf life. Identify which aspects remain open.
Identify the technical decisions
- What is the proposed control strategy?
- Which existing evidence might apply?
- What information or studies may be needed?
- What could change during scale-up?
- Who will own implementation and ongoing review?
Keep development and implementation connected
A conclusion reached during development should remain linked to the conditions used in commercial production. Discuss proposed UV, HPP, thermal, and combined-hurdle applications early.
This material is a preparation aid. Product-specific controls, limits, and conclusions require review of the actual application.
